Onion Butter
Pretty much the same as the apple butter, except there’s no pureeing involved.  Peel half a dozen or so onions, slice into thin half-moons, add water (barely cover onions), bring to boil, reduce heat, simmer, for hours and hours, until onions are brown and liquid is pretty much gone.  It’s both better and not as good as I expected.
